The defining principles of Western Noto Omotenashi-don
一.志賀産のコシヒカリを使用。
To use locally produced Shika-machi Koshihikari rice.
二.志賀産の水を使用。
To use Shika-machi water.
三.地場産の魚介類、農産物、畜産物を使用。
To use locally produced marine, agricultural and farm products.
四.志賀町在住の者が自ら考案し調理。
To have the dishes prepared and developed by local people.
